put tripe into a saucepan and cover with cold water
|

bring the water to the boil
|
|

|
strain the water away and cut the trip into pieces about 2" square
|

cut the onions finely
|

put the tripe back into the saucepan with the onions
|
|

|
cover with hot water and simmer for one hour until tender
|
|

|
take tripe from the water and save both
|
|

|
mix the butter and flour in a basin and a little at a time add the water in which the tripe has been cooked until the flour is smooth.

|
add the milk and stir until it boils
|
|

|
season pour over trip and serve
|
