1 pint

fish stock

fish stock cube

button mushrooms

 

2 oz

butter

onions

nutmeg

 

to taste

salt and pepper

 

Method

wash the fish in vinegar and water

cut into thick slices

slice the onions and fry until brown in the butter

peel the mushrooms

add the stock , mushrooms,herbs,nutmeg and seasoning

when warm add the fish and simmer for 30 - 40 minutes

take out the fish and keep warm

knead the flour and remaining butter to a smooth paste and add to the stewpan

simmer and stir until the sauce is cooked smoothly

place the fish onto a hot serving dish

strain the sauce over the fish and garnish with the mushrooms
