Shin of Beef Soup

shin of beef

front leg joint available on request for butchers

water

 

1 oz

butter

 

1/2 oz

plain flour

 

1/2

sliced onion

 

1/2

sliced carrot

 

small piece

sliced turnip

swede or potato can be used

bouquet garni

peppercorns

 

to taste

salt

 

Method

Melt the butter in a stewpan and fry the onion,carrot and turnip until brown

Cut the meat into small pieces

add the water, meat, bouquet garni, peppercorns and a little salt and simmer gently for between 3 and 4 hours

Strain, skim well and reheat the soup

mix the flour with a little water and stir into the soup

boil gently for about 5 minutes and then serve
