Sheep's Head Broth

sheep's head

carrots

turnip

swede or potato are suitable

2 strips

celery

bouquet garni

 

1 tbs

rice

 

to taste

salt and pepper

 

Method

remove the brains and tongue and soak the head in salt and water for 12 hours changing the water frequently

put the head into a large saucepan , cover with water and season

3

bring to the boil then strain and wash well

4

return to the saucepan bring to the boil, skin thoroughly , season and simmer for 3 hours

dice the vegetables

add the vegetables, rice and herbs to the broth

7

continue cooking for a further hour

8

remove the head and remove the meat from the bone

9

dice the meat and return it to the broth

10

remove the herbs and season to taste

11

serve
