Sage and Onion Sauce

Ingredients

3/4 pint

brown stock

beef stock cube

2 medium

onions

 

1 oz

breadcrumbs

 

1.5 oz

butter

 

 1 tsp

finely chopped sage

 

to taste

salt and pepper

 

Method

dice the onions finely

melt the butter in a saucepan

fry the onions slowly until brown

add the stock and boil

add the sage, breadcrumbs and seasoning

simmer for 10 minutes

serve in a sauceboat with pork, game or poultry
