streaky bacon

 

Method

pluck and draw the partridge

truss in similar manner to a chicken

cover the breast with  rashers of bacon

4

roast in a moderate oven for 30 min's basting frequently

a few minutes before serving remove the bacon dredge with flour and baste to give th bird a nice appearance
