|
cut the rabbit into joints and wash in warm water
|

dry the joints and dredge with flour
|
|

|
heat the dripping in a stew pan and fry the rabbit with the onions until they are lightly browned
|

drain off the dripping and add sufficient water to cover the rabbit

|
cut the bacon into strips and add to the pot
|
|

|
bring to the boil removing scum and then simmer for 1 hr 15 min's or until tender
|

remove the rabbit and keep it hot
|
|

|
mix the flour to a soft paste and then add to the stew pan mixing it with the rabbit juices to form a gravy. Bring the gravy to the boil.

Season the gravy and pour over the rabbit to serve
