wash the rabbit and cut into small joints. Don't forget to remove the liver.

cut the vegetables into small cubes

put the water into a large saucepan , add the bacon and rabbit and bring slow;l.y to the boil. Remove any scum as it rises.

After one hour add the vegetables,rice and a little salt and continue to cook for another hour.

take out the rabbit and remove a little of the meat and return the cut meat to the broth to be reheated
|
|

|
season to taste and serve
