clean and wash the fish taking out the roes

place the mackerel in a baking dish

sprinkle with salt and pepper

add the bay leaves, vinegar,allspice, peppercorns and the water

bake in a cool oven (about 140 C) for about 1 hour.

let them stand in the liquid until required

The dish was popular in older days, when only very rich people had ice houses, as a way of preserving mackerel and other fish. Mackerel tend to be very plentiful at some times of the year and then may be scarce. Pickling was the only way to enable them to be eaten a long time after they were caught during time of scarcity.
