leg of pork

 

1 oz

sage

 

to taste

salt

 

to taste

black pepper

 

2 oz

breadcrumbs

onion

 

 

apple sauce

 

 

stuffing balls

 

Method

parboil the leg for 30 min's

take the skin of the joint

Grease a roasting tin and ad the joint

baste with butter and roast in a moderate oven  for 1 hr

mix finely minced sage,black pepper , salt and bread crumbs rubbed through a colander and then add a finely minced onion

remove the joint from the oven

sprinkle the mixture below and then over the joint

return to the oven for a further 30 -45 min's

serve with onion gravy, apple sauce and stuffing balls

A goose way beyond the expectations of the lower classes and so recipes for mock goose and mock turkey were common. Most use pork joints or chops to simulate the more expensive dish. This method does indeed provide a white meat with a taste more like turkey than pork.
