parboil the leg for 30 min's
|
|

|
take the skin of the joint
|
|
3
|
Grease a roasting tin and ad the joint
|
|
4
|
baste with butter and roast in a moderate oven for 1 hr
|
|

|
mix finely minced sage,black pepper , salt and bread crumbs rubbed through a colander and then add a finely minced onion
|
|

|
remove the joint from the oven
|
|
7
|
sprinkle the mixture below and then over the joint
|
|
8
|
return to the oven for a further 30 -45 min's
|
|
9
|
serve with onion gravy, apple sauce and stuffing balls
|
