chopped mint
2 dessertspoons
sugar
1/2 pint
white wine vinegar
malt vinegar is suitable
Method

gather fresh young mint leaves and wash

mince the mint leaves very finely

put the leaves in a small bowl

add vinegar and mix
5
add sugar to taste and stir until the sugar is dissolved

stand for 2 - 3 hours or overnight to allow the vinegar to take the mint flavour
7
Serve with roast lamb
