Liver and Bacon

Ingredients

1 lb

sheep or calf's liver

 

1/2 lb

bacon

 

1 tbs

plain flour

 

1

onion

 

1/4 pint

water or bone stock

 

Method

wash and dry the liver but do not let it soak

cut into slices about 1/3" thick

mix the flour with a pinch of salt and pepper on a flat plate

dip each piece of liver in the flour covering it well

shake of any loose flour as this may burn

fry the bacon in a frying pan for 4 minutes - remove and keep warm

fry the liver in the frying pan for about 15 minutes turning occasionally to brown both sides- remove and keep warm

if onion is desired fry the onion in the same frying pan until brown - remove and keep warm

put the remaining flour into the frying pan stir well until brown

add the water/stock and stir until it boils

  arrange the liver and bacon on the plate with the onion on top of the liver and serve with mashed potatoes using the stock from the frying pan as gravy
