Steamed fish for an invalid

1 whole

whiting, plaice or sole

any white flat fish

a knob

butter

 

a pinch

salt

 

a sprinkling

lemon juice

 

Method

Butter two small plates well

fillet the fish

lay the fillet on one plate and sprinkle with salt

cover the fish with the second plate

5

put the plates on top of a pot of boiling water and steam for 15 -20 minutes

serve with a sprinkling of lemon juice
