Invalids Orange Jelly

1/4 oz

gelatine

 

3 oz

lump sugar

 

1

egg

 

1/4 pint

cold water

 

1/4 pint

orange juice from fresh oranges

any flavour fruit juice from carton

Method

Soak the gelatine in water for 20 minutes

rub the sugar on the oranges to extract the colour and flavour

put the sugar, water and gelatine into a very clean saucepan and stir over a low heat until dissolved

Strain the juice and add

Allow the mixture to get very hot

beat the egg in a basin

poor the hot mixture onto the egg stirring well

let the mixture cool stirring occasionally to mix in the egg

when cool pour the mixture into a mould and keep cool until ready to serve

In step 2 take care not to rub  the sugar on the white pith or the jelly will be bitter

Once the egg is added the mix needs to be stirred to ensure that the egg is equally distributed through the whole jelly
