wash the feet in hot and then cold water
|
|

remove all hair and any fat
|
|

|
put into pan with enough water to cover them
|
|
4
|
boil regularly skimming the top of the pan
|
|

|
when the flesh had dropped from the bones and the liquid reduced to about half strain into a clean basin
|
|
6
|
strain through a jelly bag and add lemon juice or other flavouring to the liquid
|
|
7
|
set in a cold place until the mixture is firm
|
|
8
|
remove any fat from the top
|
|
9
|
serve to the invalid
